    (TIS THE SEASON)

    "How Y'all Are? I'm so glad for you to see me, Yeah!"



    In case some of you didn't recognize the names in the
    Subject Title then I'll explain - -
    we are talking about the proper way to eat:
    Crayfish
    Crawfish
    Crawdads
    Mudbugs
    or whatever you choose to call them!

    Some of the pictures are very graphic and caution should be taken.

    STEP ONE:
    Boil up a batch of these tasty crustaceans, seasoning to taste:


    STEP TWO:
    Take that little bugger between the thumb and forefinger of each hand
    as shown.


    STEP THREE:
    Then with a gentle twisting motion, separate the tail from the head as
    shown.


    At this time we feel we should warn you that some people choose to
    skip STEPS FOUR & FIVE - - especially those who were born North of
    a certain Latitude Line - - well you get the picture!


    STEP FOUR:
    Insert the forefinger into the rear of the Crayfish's head and drag out
    the fat that is in there. (you still with me?)


    STEP FIVE:
    Put your mouth gently over the tip of the finger and the head of the
    Crawfish and, yes you guessed it, suck the fat from the two.


    STEP SIX:
    Now twist off the top ring of the tail section
    (sounds like I'm talking about an airplane, don't it?) - - -
    now you are ready to enjoy the sweet meat of the Crawdad.


    STEP EIGHT:
    Put the meat portion in your mouth and gently squeeze the tip of the tail.
    The meat should pop out, right into your mouth.


    STEP NINE:
    If done completely and properly then the remainder of the Mudbug
    should look like this:


    Aeeeeeeeeee! - - "LIFE IS GOOD"

        This is a serious question. Sometime in my mid-thirties, I became allergic to shellfish, likely because of the fairly high iodine content. The iodine comes, as I understand it, from the sea water that they live in. So, are crawdaddies OK for folks with shellfish allergies? Man, I miss my lobsters and shrimp and such! Maybe Dr. Seered has a professional opinion.

        I appreciate any info you can provide

            Got lots of big fresh springwater
            crayfish in the stream out back. --

            Iodine is artificially added to table salt by the processors.
            Sea-salt (non-processed) is used by people with iodine allergies.

            Allergies to shellfish can be fatal, causing respiratory
            arrest from an allergic inflammatory response wherein
            your airways swell up & choke you to death.

            Sounds as if your allergy is more to shellfish, versus salt, eh?

            (Perhaps a question best (safely) determined by an allergist's testing).

                Even if they were kosher and I could eat them, I'm not sure if I would. Things look scary to me.

                    I come from up north, but I've been eating them the southern way since I way 10. I even got my wife to eat them that way last time we were down south. She loved it. I am getting hungry just thinking about it. Delicious.

                      Hey, Dan, I have had some problems once or twice but I think it wasn't so much the Iodine as it was the salt, seasoning and not purging them correctly - - - that was years ago and I haven't had any prob since. Maybe I outgrew the allergies which isn't uncommon.

                        Yep, it's to the shellfish, which my old doc some years ago guessed was likely due to the iodine (shellfish has TONS of it, I guess). We didn't do the testing, as I already know I can't eat 'em, so there wasn't much to gain. I had speculated that the iodine was from the salt water, but I'm prepared to be wrong on that one - it was basically a guess. The amount of iodine in table salt doesn't seem to be a problem for me, but I don't eat a lot of it. I've stayed away from crawfish just to be safe, but they sure look good (think I'll skip the head, though!).

                              I like 'em but it sure is a lot of work for a tiny piece of meat. The payout after peeling a Gulf shrimp is a whole lot better!
