I know not to destroy the damned things, but what about when the fruit ripens? I've wanted to try it but can't find anything about it. I know I have to obtain a permit to pick prickly pear fruits, is there a similar thing for saguaro, or do any of ya'll happen to have one growing in your backyard?

You are not allowed to harvest on public land. you can pick and sample, but can not take any quanity off the property. The local Indian population still harvests on their land. Prickly pear is pretty good, can't wait to try it off the paddle instead of off the shelf at Fry's. But everyone I have talked to says saguaro is much better.Editor-at-Large at...well, here, of course!

I think we made sahuaro jelly once, that was a long time ago....30-40 years....we had a couple on our property.
You could google the laws? Might be federal law, though. My fabulous web page

Not for Saguaro...tis illegal on public land...has to do with seed distribution and endangered plant stuff I guess...If you can leave two black stripes from the exit of one corner to the braking zone of the next, you have enough horsepower. - Mark Donohue

One-time use permit to salvage or harvest a native plant = $7

Also from the reading that I did, the fruits aren't ripe until late June/early July......
