Why not set the manifold up for efi all the way when you pop the bungs in and just leave the fuel rails and injectors in place? The injectors will seal the bungs up nicely and youll be ready to go EFI when the time is right. We ran a dyno comparison Dominator VS. MPI and that method worked out well. Of course I neglected to take a pic of the motor with the carb on it... Oh well.
