With even the pushrod cam-in-V engines getting some form of VVT what out there in the world of aftermarket engine controls can make use of these mechanisms?

It depends entirely on how the controls are driven by factory computers: most early systems are on/off solenoids, simple to control with DIY electronics.

Later systems use Pulsewidth Modulation to control, a little more challenging but again, DIY-able.
