I've always been a fan of the 1947-1965 PV444/544 like this white one. They remind me of the fat fenders rods we all like, but in a smaller package.
The 1956-1970 Amazon was also a cool car, and had a great boxy look.
I would love to build one of each, but if I was only doing one, I would go for the 444/544. I would love in power it with a Pontiac "Trophy 4" (half a 389) with a turbo and intercooler. Back it with a six speed and then slam it on Air Ride. Big and littles would be the way to go, and I'd want it to run mid 11's so I could have fun with it, but it wouldn't need a rollbar. I have no money, so this isn't going to happen anytime soon, but....
