First, laugh like shit at Thom, cause that's the funniest thing I've heard all day.
Second, slice the squid into 1/2" rings and marinate in buttermilk for an hour or two. I'd only do a pound or so at a time, unless you're feeding a gang.
Sift together three or four cups of flour and a small handful of kosher salt. Toss in the squid and coat, and then use a mesh strainer to get rid of the extra batter. I sometimes use Canola oil, and sometimes peanut oil, but whatever you use get it to about 400 degrees and ease in the squid and cook about a minute.
I usually cook it in batches, usually 4 or 5, so the oil doesn't cool off. Use a candy thermometer to keep an eye on the temp.
You can eat it in batches, or keep it warm in the oven.
ETA: Simple is best, expecially if it's fresh.
